Recipe: Broiled Salmon

FOTD: Earth Balance

I’m about to give props (that means I like it) to a product that might surprise some of you. Well not as much as the chips perhaps. ;) My mom discovered this tasty buttery spread at Trader Joe’s. I have long discouraged use of margarines but upon further investigation, this product had the “goods” of margarine, but not the bads.

Smart Balance

This product is:

  • No Hydrogenated Oil
  • Non-GMO Ingredients
  • No Trans-Fatty Acids
  • All Natural (NO PRESERVATIVES)
  • No Artificial Flavor
  • Lactose Free
  • Gluten Free
  • 100% Vegan

And you can bake with it. I kid you not. I used it in an emergency (shh! don’t tell anyone!!) - making the Gateau Piege and realizing I did not have any butter in the house – only this tub of buttery spread. It said good for baking and at that point I was too far along in my recipe to turn back so I went for it. And it turned out just fine. I used it again to make lemon bars – and the shortbread tasted delicious!

Bottom line – I think this is a great product and worth using as a supplement. I am not planning to get rid of butter but this is a nice alternative when I want to go easier on fat or dairy products.  Plus – in light of heart disease month, I think this product deserves a little attention. :)

Recipe: Melted Cappicola Pizza

Are you wondering what on earth “melted cappicola” could mean?  Let me explain – it is is when you lay lovely thinly sliced pieces of cappicola on a very thin pizza crust – then top that with fresh mozzarella and veggies.  After baking in a very hot oven – the cappicola spreads its flavor into the crust and veggies almost like butter.  Melted butter.  ;)

This pizza is wonderfully easy and wouldbe a perfect starter to a big dinner or is always great as a complete meal with a fresh salad.  Enjoy! Read the rest of this entry →

Devli's Cake

This recipe came to me in a monthly email that Recchiuti Chocolate sends out. I love their shop at the Ferry Building in San Francisco. And I greatly admire his amazing book: Chocolate Obsession: Confections and Treats to Create and Savor. I love simple cakes such as this – tasty and rich, but so easy and simple to put together. It can just as easily be dressed up with strawberries and chocolate sauce as served plain or with a dollop of vanilla ice cream. Versatile and easy – my kind of cake! ;)

Recipe: Haluski

My mother-in-law taught me how to make this traditional Slovakian/Hungarian dish. It is not a family dish, she learned from a friend. None of us can vouch for its authenticity but it is a very hearty simple meal that is perfect for winter! I learned how to make the dish over the Christmas holidays and recently found myself with quite a lot of cabbage from my CSA boxes. I had some potatoes that needed to be eaten also. So what to make – haluski! I did a bit of online research and modified the recipe to match what sounded good to me as well.
