Recipe: Root Vegetable Chunky Fries with Cilantro Mayo
Who doesn’t like fries? Even better when you have a delicious dipping sauce and the fries are roasted – not fried!
These are ridiculously easy to make. Find your favorite – or perhaps as yet untried – winter root veggies: parsnips, rutabaga, carrots, and sweet potatoes. Cut them into french-fry shapes, toss them with some olive oil, paprika, salt and pepper. Throw them in the oven at 450 for 45-60 minutes. Serve them with the following delicious Cilantro Mayo dipping sauce and just enjoy!Â
Cilantro Mayo Dipping Sauce
Ingredients:
- one large bunch of cilantro, chopped (use mostly leaves)
- 1/4 – 1/2 c. mayonnaise
- Juice from one lemon or lime
- salt and pepper
Put all ingredients into a small food processor and whirl until blended. Dip veggies in and love them.
