Recipe: Farro and Dried Fruit

I recently posted a recipe for farro with swiss chard mixed in. I loved the addition of the greens in this recipe! But the other night with fish, I decided to cook the kale we ate alone. Brad was a bit iffy on the farro with swiss chard, so I needed to spice up the farro in a nice subtle manner. Adding a touch of vinaigrette with dried cherries made for a lovely side dish with no left overs. Personally I love farro in any form, but this time Brad loved it too! Enjoy!

Ingredients:

  • 1/2 cup farro
  • 1/4 cup dried cherries
  • 2 T. champagne vinegar
  • 3 T. olive oil
  1. Rinse farro until water is clear. Put in a several quart pot filled with about 3-4 cups of water and bring to a boil. Lower heat and simmer for about 15-20 minutes until cooked but still chewy. Drain well.
  2. Mix oil and vinegar together. Combine farr, cherries, and vinaigrette. Enjoy!

Recipe: Russian Kale

This week we got a new type of kale in our CSA box: Russian Kale. The entries online about Russian Kale are few and far between – but I’ll keep looking for more information. ;) It is much leafier than a lot of the kale we have received this year in our box. The flavor is fantastically rich and it was a delicious side dish with dinner!

Ingredients:

  • 1 bunch of Russian Kale
  • 1 shallot, thinly sliced
  1. Tear kale leaves from thick stem – discard stems. Wash and gently dry.
  2. Heat about 1 T. of olive oil in a large saute pan. Saute the sliced shallot until softened and fragrant.
  3. Add washed kale to the pan. Extra water droplets are perfectly fine here – the kale doesn’t need to be perfectly dry.
  4. Mix then cover pan. Cook and stir every few minutes, covering between stirring. Once leaves are wilted and cooked thru, serve warm and enjoy!

Yesterday we learned that eating more veggies can help you feel five years younger! Today a way to feel even younger!

For the first time scientists have found something that not only halts brain shrinkage but actually reverses it. According to a new study, the brain’s long, slow decline may not be inevitable. Regular aerobic activity apparently increases blood flow to the brain and triggers biochemical changes that increase production of new brain neurons. Professor Arthur Kramer of the University of Illinois says, “After only three months, the people who exercised had the brain volumes of people three years younger.” Studies have linked increased brain volume to improvements in thinking, remembering and the ability to ‘think outside the box.’

There we have it – eat more veggies, feel five years younger! Get some aerobic activity and your brain age decreases three years. Now you can feel almost a decade younger in no time. ;)

FOTD: Scary Statistics, Children’s Health

Here are some amazing stats I have recently learned – those of you with kids are going to be stunned (& horrified)!

  • this generation of children being born is the FIRST generation of kids NOT expected to outlive their parents.  Can you believe this!?  Our diet & health as a nation (world?) has declined so much that our children aren’t expected to live as long as we will?
  • The average American child eats:
    • 3/4 pounds of sugar a DAY
    • More than 2400 mg of sodium a DAY
    • Gets more than 30% of their daily caloric intake from TRANS and HYDROGENATED FATS.

These statistics make me ill.  :(

The solution is so simple and right in front of all of us.  More fruits and vegetables and less processed foods. Small changes in diet can make profound life changes.

Going Greener

Brad and I had an emissions hogging (albeit fun to drive) SUV for over 3 years. Now that we are back in San Francisco and not driving daily, we really didn’t need an all-wheel-drive, larger vehicle. And quite honestly we wanted better gas mileage! This past weekend we traded in my beloved Oslo (my name for the SUV) and came home with a lovely Camry Hybrid!

Driving a hybrid is going to take a little getting used to – that is for sure! But it is a constant (and very fun) game to see what your gas consumption score will be (EXCELLENT so far!) or how your car recycles energy.

I’m signing off for the weekend as we take our new – and as yet unnamed hybrid baby – down to Paso Robles for Hospice du Rhône.
